Snack with friends: here are 3 tips and a recipe by Mimi Thorisson

We’ve been to RAW&CO on the occasion of the presentation of the coffee Vergnano signed by  Mimi   Thorisson and we asked the famous food blogger to give us some advice for organize a snack with friends perfect.

Because “When women help women, nothing can stop them.”

Here are three tips and a recipe to set up the perfect frame for it.

1. La mise en place

Let’s start at the table: carefully set it with special attention to detail.

“I love to combine design or extremely simple elements with curious, rustic or perhaps family pieces: ancient and modern together make each other more beautiful.

An old teapot or special cups, saucers, place mats, cake pots and risers, try to recreate an environment as nice as possible and what will be consumed will look even better.

2. To drink

Tea and coffee will by definition be the real protagonists: choose several and propose a selection.

Infusions, aromatic teas and a good roasting of ground coffee will make all the difference.

“My favorite coffee? Strong body and round, elegant aroma. It’s good for breakfast, but it’s also great for snacks.”

3. To eat

Don’t skimp. And opt for simple, homemade things.

The scones or homemade biscuits to go with several different jams will win them all over but my heart’s recipe is madeleines. .

It is one of the most popular cakes in France for tea time, for all ages, ideal to soak in a glass of milk or a cup of tea.

In the shape of a shell, this little gem of a cake is always a special pleasure.

There are various versions of this famous recipe, but for me it must have d&apos flowers; orange, this is what I love most about madeleines.

The smell is pure comfort and joy, it reminds me of the scent of my children. The orange blossom is renowned for its purity and calming effects, especially when mixed with honey. (That’s why I added honey to the recipe)”.

Ingredients for the Madeleines:  

3 eggs 
150 grams of flour
125 g butter or margarine (melted) 
130 gr of sugar 
20 gr of honey
1/4 teaspoon salt
1 teaspoon of baking powder 
1 teaspoon of lemon zest
2 tablespoons of d’orange flower water 
Moulds for madeleines (found in silicone)

Procedure for preparing the Madeleines

Beat sugar, honey, salt and eggs together until they’re light and fluffy. Sift together flour and yeast then gradually add to the egg mixture and stir gently. Add melted butter, l’d&apos flower water;orange and lemon zest , stir slightly, cover and leave to stand for at least 2 hours or refrigerate all night long. It is very important that the batter is cold before cooking: thermal shock is necessary to get a good, round, soft madeleine.

Preheat the oven to 180 degrees. Butter and sprinkle the moulds with flour. Add a nice spoonful of cold batter into the moulds. Bake in the oven for 10-12 minutes depending on the size of the molds. When ready, churn out and use a round pointed knife to gently lift each madeleine from the mould.

The following French food blogger Mimi Thorisson has signed a very special project in collaboration with Coffee Vergnano a new pack of coffee cans inspired by the clothing collection designed by Mimi for the French brand Mirae.

Three exclusive patterns for one limited edition enriching the Pink Collection dedicated to Women in Coffee , the Caffè Vergnano fundraising project that aims to support the women who work in the coffee plantations.

All the proceeds from the sale of this special collection will contribute to the Women in Coffee counter.

The goal is to reach $10,000 for the purchase of a roaster and the start-up of a micro roasting plant run by a community of 20 women in Hondo Valle County in the Dominican Republic.
